These reagents follow the Fehling method in which the reaction between reducing sugars and the two reagents (Fehling’s A Solution and Fehling’s B Solution) causes a blue tint in the sample. By adding a sample of wine that contains reducing sugars to the HI83746A-0 and HI83746B-0 reagents and digesting for 7 minutes, a reaction will take place and the HI83746 photometer can be used to determine the reducing sugar concentration from the color that is produced. The results will be displayed in g/L (ppt), and users can perform simple calculations to obtain results of reducing sugar percent (%) or potential alcohol degree (% by volume). These reagents are designed to be used with samples that have an expected range of 0.00 to 50.00 g/L (ppt) reducing sugars.

Specifications

SKU

HI83746-20

Name

Reducing Sugar Analysis Reagents Kit (20 tests) - HI83746-20

Package

Vials

Quantity

20

Method

Fehling Method

Manuals

Reducing Sugar Analysis Reagents Kit (20 tests) - HI83746-20

The HI83746 photometer is for the determination of reducing sugars in wine. During alcoholic fermentation, yeast consume sugars found in the grape juice, or must, and converts it to ethyl alcohol and carbon dioxide. In the case of certain styles of wine such as semi-sweet or dessert wines, some sugar is allowed to remain post-fermentation. This residual sugar can serve to provide a sweeter character to the final blend or play a role in microbial stability.

The primary fermentable sugars found in grapes are glucose and fructose. These two simple sugars are also known as reducing sugars because they contain functional groups capable of being oxidized under certain conditions. After reaction with excess alkaline cupric tartrate (Fehling reagents), the content of reducing sugars can be determined colorimetrically. The Fehling method is not an exact determination but an index of the reducing sugar concentration, because the reaction depends upon the amount and type of reducing sugars present. When the reducing sugar content is known at the beginning of fermentation, the potential alcohol degree can be estimated by multiplying the sugar concentration (in g/L) by 0.06.

The HI83746 uses the Fehling method to determine the concentration of reducing sugars less than 50.00 g/L (ppt). When Fehling’s A and Fehling’s B Solutions react with a sample containing reducing sugars, the sample will undergo a color change; the greater the concentration, the deeper the color. The associated color change is then colorimetrically analyzed according to the Beer-Lambert Law. This principle states that light is absorbed by a complementary color, and the emitted radiation is dependent upon concentration. For determination of reducing sugars, a narrow band interference filter at 610 nm (orange) allows only orange light to be detected by the silicon photodetector and omits all other visible light emitted from the tungsten lamp. This conversion is based on the tables found in the ICUMSA Methods Book (International Commission for Uniform Methods of Sugar Analysis) that documents the changes in refractive index with temperature for a percent by weight sucrose solution. Since the majority of sugar in grape juice and must is fructose and glucose instead of sucrose, the reading is sometimes referred to as "Apparent Brix". Typical grapes at harvest will be between 19-24% Brix or degrees Brix (°Bx). Refractive index is a measurement of how light behaves as it passes through the sample. Depending on the sample's composition, light will refract and reflect differently. By measuring this activity with a linear image sensor, the sample's refractive index can be assessed and used to determine its physical properties such as concentration and density. Refractive index is a measurement of how light behaves as it passes through the sample. Depending on the sample's composition, light will refract and reflect differently. By measuring this activity with a linear image sensor, the sample's refractive index can be assessed and used to determine its physical properties such as concentration and density. In addition to the linear image sensor, the HI96801 uses an LED light, prism and lens to make measurement possible.

Variations in temperature will affect the density of a solution based on the compound that is present. Refractive index is a measurement of how light behaves as it passes through the sample. Depending on the sample’s composition, light will refract and reflect differently. By measuring this activity with a linear image sensor, the sample’s refractive index can be assessed and used to determine its physical properties such as concentration and density. In addition to the linear image sensor, the HI96800 uses an LED light, prism and lens to make measurement possible.

Variations in temperature will affect the accuracy of refractive index readings, so the use of temperature compensation is highly recommended for reliable results. The HI96800 contains a built-in temperature sensor and is programmed with temperature compensation algorithms in accordance with the ICUMSA Methods Book Standard for a percent by weight sucrose solution at 20°C. These compensation algorithms vary based on the parameter being measured. The user can switch between temperature compensated (nD20), non-temperature compensated (nD) and temperature compensated % Brix readings by pressing the ‘Range’ key while in measurement mode.

Features at-a-glance:

One-point calibration

Calibrate with distilled or deionized water

Small sample size

Sample size can be as small as 2 metric drops (100 μl)

Automatic Temperature Compensation (ATC)

Automatically compensates for temperature variations

Quick, accurate results

Readings are displayed in approximately 1.5 seconds

Upgraded Dual-level LCD

The large LCD screen displays nD20, nD or % Brix and temperature readings simultaneously

Stainless steel sample well

Easy to clean and corrosion-resistant

Battery indicators

Battery percent level remaining at startup and low battery indicator

Automatic shut-off

Conserves battery life by shutting off automatically after three minutes of inactivity

IP65 water resistant protection

Water resistant ABS plastic casing designed to perform under laboratory and field conditions.

Video

[embed]https://youtu.be/wEbvOX_uANI?feature=shared[/embed]

Specifications

SKU

HI96800

Name

Digital Refractometer for Refractive Index and Brix - HI96800

Sugar Content Range

0.0 to 85.0% Brix; Refractive index is a measurement of how light behaves as it passes through the sample. Depending on the sample's composition, light will refract and reflect differently. By measuring this activity with a linear image sensor, the sample's refractive index can be assessed and used to determine its physical properties such as concentration and density. In addition to the linear image sensor, the HI96802 uses an LED light, prism and lens to make measurement possible.

Variations in temperature will affect the density of a solution based on the compound that is present.
